Grilled Vanilla Peaches



8 Peaches

1 Lemon

1/2 tablespoon of vegetable oil

1 1/2 tablespoon packed light brown sugar

2 teaspoons of water

2 teaspoons of vanilla

1/8 teaspoon cinnamon

1/8 teaspoon salt

*vanilla ice cream


Peel, slice and pit peaches.

Pre-heat grill or stove to high. Combine lemon juice and vegetable oil in a bowl. Add peaches; toss to coat. Place peaches (with liquid) on a large piece of parchment-lined foil or I put directly in pan.

Stir together brown sugar, water, vanilla extract, cinnamon, and salt. Brush over peaches. Fold foil to form a packet, crimping edges to seal. Grill, covered, for 15 minutes. Again, I just coated and tossed peaches for 15 min on stove top. You could also make in the oven.

Divide among 8 bowls. *Top with scoops of ice cream.
